Caledonian was founded in 1855 in Edinburgh’s Gorgie district, growing to become one of Scotland’s largest and most technologically advanced grain distilleries. Known for its signature Coffey stills (continuous column stills), Caledonian produced a lighter, more delicate spirit compared to the heavier pot-still malts. The distillery was often called the "Edinburgh Corn Exchange" for its scale. Although silent since 1988 (with most of its stock transferred to Diageo’s nearby North British distillery), original Caledonian casks have become highly sought-after artifacts of Scotland’s industrial distilling age.
